fashion : mint to be

Hi y'all! It should come as no surprise to anyone reading this that I love mint. LOVE IT. I'm always drawn to the color, whether it's a blouse, purse, necklace, scarf, photo, paint color, or whatever. It's one of those colors that makes me happy. Every time. 

Currently, this is my favorite outfit, partially inspired by this photograph:

And before you freak out and think, "I can't afford any of this," let me stop you right there. I don't have this exact outfit (because you can't get pictures of everything on polyvore) but I do have an outfit VERY similar to this. I got my mint skinny jeans from Old Navy on CLEARANCE for about $15. I got ruffle wedges from DSW for less than $10. I got an ivory lace tank from Maurices. I got Essie - Fiji, from Wal-Mart, around $7. I got a beaded, layer, statement necklace in mint and peach from FOREVER 21 for around $5. I don't really carry a purse right now, unless you count the diaper bag that is forever attached to me. I can't wear bangles (they never fit over my gigantor hands) and I don't have that lipstick. But gosh, I want some new lipstick soon. 

So see? I don't spend a lot of money on my fashion, but I love putting together fun, flirty outfits. And this outfit is great! I love that it's dressy enough I feel comfortable wearing it to Sunday morning church services. But it's casual enough that I can wear it all day and not feel constricted. It's my favorite! Plus, I'm just oodles and oodles in love with mint. Mint = Happiness! ♥

recipe : sour cream enchiladas

Hi y'all! If you're anything like me, you could practically live off of Mexican food. Yes, I love a good hamburger and pizza, but my go-to food is usually of the Mexican variety. And because of that, I've gotten pretty good at various Mexican dishes. Like seriously good. Crazy good. I could open my own Mexican restaurant good. Okay, maybe not. But still, it's yummy, easy, and I'm going to share my Sour Cream Enchiladas recipe with you so you can go impress your friends and family. 






If I say this recipe is fool-proof, would any of you view that as a challenge to mess it up? Not sure, but really, it's an easy recipe and it's hard to mess it up. 


SOUR CREAM ENCHILADAS : 
  • 5 XL (burrito size) tortillas
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can diced tomatoes & green chiles (aka rotel)
  • 8 oz (1 small tub or 1 cup) of sour cream
  • 3 large chicken breasts, cooked and shredded (I boil mine. It's easy, quick, and works the best in my opinion.)
  • shredded cheese (about 2 cups depending on your cheesiness preference



Put your shredded chicken in a small-medium mixing bowl and set aside. In a medium sauce pan combine: both cans of soups, rotel, and sour cream. Stir together. Once the sour cream mixture is bubbling, remove from heat and pour 1/3 of the mixture into the mixing bowl with the chicken. Stir the chicken and the mixture together until chicken is evenly coated. Pre-heat oven to 390 degrees. Grease a 9x13 baking dish.


Spoon a portion of the chicken mixture down the middle of a tortilla, roll, and place (seam side down, this will eliminate frustrations on your part later) into the baking dish. Repeat with all of the tortillas. The great part about this is, if you're like me, and you don't guess well how much of the mixture to add to each tortilla and after you have filled up your dish with tortillas you still have mixture left over, you can just pull out a tortilla that isn't as full and add more. I have to do this every. single. time. :) 

Once you have your dish full of stuffed, rolled tortillas, pour the remaining sour cream mixture over top of the enchiladas. Use a spoon to separate the tortillas so the mixture can get between each tortilla, and between them and the sides of the baking dish. Top with your shredded cheese. We are a cheesy (both definitions) family so I usually put about 2 cups on, but put as little or as much as you'd like. Bake until cheese is melted and, if you like, a little golden brown on top. Usually about 20-30 minutes is good. And that's it! Serve with your favorite Mexican sides and enjoy! 


Options : You can add onion, cilantro, jalapenos, and other spices to your sour cream mixture if you want. I'm not a big onion fan and we have a little one that eats so we have to keep things pretty mellow on the spicy scale.

me : weekly loves

Hi y'all! HAPPY FRIDAY! We made it through another week, congrats! Today is the only day this week I don't have something on my calendar. Halleluyer!

Anyway, y'all might remember my previous hit-and-miss series, "Weekly Loves" where I post about a few things I'm loving that week. I eventually just let the whole series slide to the edge of blogdom, to be lost for what might have been forever, but now, I'm bringing it back! Much like the sexy, but a lot more fun. And with less Justin Timberlake. 

So here, we go!






Seriously!! Those are AMAZING!!! I want them so bad! I'm pretty sure Joey would veto these, but I'm the queen of the kitchen, vetoes hold no power over me. But aren't they goregous!?!? Maybe if I tell him I'll only use them for cookouts and parties.... ;) 

Okay, is *anyone* surprised that I have something in my "weekly loves" that is mint colored? I think not. It's the color that causes me to swoon daily. I love this tote. I want it in a *slightly* smaller size... like 2/3 of this size, and in a cross-body strap.

Self manicures! Getting a manicure is fun, but I always feel guilty, because I could have done that at home. Pedicures are a different story, I don't have a pedi-chair and can't do all that massaging and stuff while I also relax at home. But manicures, I would just rather save my money for a pedicure, and do my mani at home. Plus, I can change out my nail design every day and not feel guilty about all the money I'm spending.

me : there will always be peace

It's been one of "those" days. The days that everyone has, but few talk about. One of those days when the boys are both demanding and extra clingy, when the husband and I are just "off", when my mind is reeling with all the things I need and want to do, but I can't get anything done besides juggling babies, diapers, bottles, and sippy cups, and arguing with the husband about why there are leaves in our drive-way, why the older one is dressed in that, why it's 1:07, or other such trivial, insignificant details of life that never matter except for arguments and disagreements. 


I'm weary. Weary of balancing my creative life, my "real job", my friends, my family, our budget, bottles, housework, babies. I just want to have some quiet, some time to be creative, time to watch tv and unwind, time to not be needed. 






And then, evening comes, and with it, a most glorious sunset. I almost never miss a sunset and I have never met a sunset I didn't like. The sun sinks down, behind the hill with the cemetery not too far from our home. The blues and purples of twilight wrap around us. Whatever annoying things have bothered me all day, sink with the sun. 


The older one gets his bath where he splashes and "quack, quack, quack"s over and over. We tuck him into bed, covered in his blanket and prayers. The younger one gets one final bottle. Then some time with mommy and daddy hovering over him, singing, talking, stretching him out, and praising him for holding his head up so well during "tummy time". Then he, too, gets tucked into bed. Wrapped up like a burrito, with lullabies and prayers drifting around him. 


And then there is peace. 


And I am so grateful for it. 


I've come to understand that in all of the worries of life, the juggles, and the balances, in the end, there is peace. There will always be another paycheck coming, there will always be bed time, there will always be another day, a new morning, where His mercies are new again. I've come to understand that life is a hassle, and sometimes, I don't handle it with the grace that I should. 


But in the end, there will always be peace.

inspiration : DIY monogrammed tote

Hi y'all! Happy Wednesday! I've got a little DIY for you today, nothing ground-breaking, but definitely something fun & easy to do. And it's something you can knock out in less than an hour, so you don't have to worry about committing to an extensive project the next time you want to get your craft on!


I know I'm not the first one to do this, in fact, this isn't even my first time doing this little DIY, but it's my first time sharing it. :) I originally got the idea here. I made a few back then and then I put this one in the memory bank (the pinterest of my mind, if you will) and waited for a good time to do it again. Well, I decided my lovely friend Amanda needed a new tote. Or maybe I just wanted to make one and thought she would appreciate it... either way. So I made one and mailed it to her with her last letter. (Spoiler alert if she hasn't gotten it yet!) Because we're also penpals and write letters back and forth constantly, which I love! Anyway, I digress...  here's how I made a monogrammed tote for my friend Amanda: 

What You Will Need : 

♥ Canvas Tote (mine was $2.47)
♥ Spray Adhesive
♥ Doily
♥ Paint (fabric or I used acrylic)
♥ Paint Brush
♥ Work Space (you don't want to do this on your kitchen table unless you lay down a paper bag/newspaper/something to keep the adhesive spray from sticking. that stuff is crazy strong and sticky!)
♥ Sharpie (optional, not pictured)


(If your bag has a big crease in it [like mine did] or lots of wrinkles, go ahead and iron it first.)
First, lightly, lightly spray the back of the doily with your adhesive spray. You don't need a lot, and it comes out fast, so be careful. Position the doily where you want your monogram. I chose the center, but you can do the edge, a corner, or whatever you'd like.  


Second, take your paint/paintbrush and start filling in all the holes in the doily. The Dabbing method works really well so use a short-bristle brush for that. Go all around, making sure you completely fill in all the holes and that you don't go crazy and get off the edge. 


Let dry (I used acrylic paint and it took about 10 minutes for mine to dry). 
Peel the doily off the bag. I used too much adhesive spray, so I had to use a paint knife to help scrap off the doily. It works best if you lift around the edges and try to remove in larger pieces


And voila! Now you have a lovely doily silhouette on your bag!


Next, add your monogram. I just free-handed mine with a marker, but you could also print a template from Word. The ones I did a couple years ago I painted with acrylic paint. Go nuts, options are endless!


And there you have it, your very own monogrammed tote!

Blog Makeover & Updates!

Hi y'all! I've been MIA on the blog a bit. Well, actually I posted twice this week, but it still feels like I'm completely MIA. 


But I've been thinking about this little ol' blog of mine, the decor, the colors, the content, the series, etc. and I finally decided it was time for a makeover. Or really, more of a refresher if you will. 


So you might notice the new header as well as the new thumbnail buttons along the left of the page... there are new colors for links and things and I will be updating most of the other decor (blog thumbnail) before I'm finished with the visual refresher. 


But there will also be a content refresher. Specifically, it's time to say a final goodbye to some series that I've loved, introduced, stopped, restarted, etc. Goodbye "Shades of Summer/Fall/Winter/Spring", "Treasury Tuesday", and the "Wishlists" and "Giveaways" buttons over there <----------------------------. 


I'm definitely keeping the Friday fashion posts aka Photography Meets Fashion (but am rethinking the name a bit... we'll see if I decide to change that). And will be posting "Goodies" posts weekly, so Etsy items will still be featured. (I just LOVE the goodies post so even though I'm saying goodbye to the "shades" series, I'm keeping the goodies around.)


So what does all this mean to you? Well, I don't know. Maybe nothing. Maybe something. But I do know you can expect more goodies, more fashion, and more (I love this one) writings from me. And altogether, more inspiration. Which is what this blog is for, to inspire. And lately I've been feeling uninspired lately on my blog and I think it's because I tried to put myself in a box, instead of really letting my blog be what it is - an extension of my own personality. 


I hope you like and support the changes... I'm excited about them!


And now, I'm going to go work on a fancy DIY that I hope to share with you soon! ;) 


Have a fantastic weekend! I'll be busy taking care of 3 boys. Yesterday Joey had oral surgery :(. He was supposed to have one tooth pulled on bottom and one tooth cut out on each side on top. 3 hours later, he had 3 teeth cut out on top on each side and they didn't even pull the bottom tooth. Yowzah! So be thinking about him, he still plans to preach tomorrow... crazy man!

inspiration : boy nursery makeover (no. 2)

Hi y'all! A few months ago, I revealed my inspiration board for BB's room makeover. However, we put off painting, then got McCrae, and since McCrae's room was three shades of pink horizontal stripes, I felt it was more important to start with his room. So, two weeks ago when I was finished working, I would disappear into his room and paint while Joey watched the boys in the living room. It took me about 4 days doing it that way, but I got it done and it looks fabulous. I'm not ready to show pictures yet, but I definitely will when I get more finished. 


But for now, here's my inspiration board to show you where I'm going with this look: 



Nursery Makeover 2 - McCrae








To start with, the walls are all painted a taupe aka gray/brown color called Light Walnut Ash. If you hold it up to brown paint chips, it looks gray, if you hold it up to gray chips, it looks brown. It's the perfect mix between the two and I'm absolutely mad about it. I love it even more than I thought I would. I bought new light switches and plates this weekend to switch out the almond colored ones for white ones and will buy some new outlets and plates soon. Also on the list is new white doors, new trim and new base boards. And, last on the list is white crown molding, that is, if you can install crown molding on a popcorn ceiling. Does anyone know about that? If not, I'll turn to my BFF Google. ♥


We bought a dresser from some friends that I'm going to makeover with a blue ombre look. His crib is cherry wood and that works for now. Work that in with aqua, red and creamy orange accents... I think it's going to look BEE-YOO-TEE-FULL! And I'm so excited! I bought paint this passed weekend to do some paintings for his room. It's a slow process when you're short on extra cash and time, but it's coming along... slowly but surely. :) I've shopped for new fabrics for bedding, curtains, etc. and I have to say this: Where are all the stylish, non-girly fabrics? Most fabrics I found were boring or girly. Lame!


As for decorations, there will (of course) be a garland of my own making in there, as well as some of my paintings. I don't know if I'll so the lanterns, since we have that in BB's room already, but we might do something else that hangs from the ceilings... I've got ideas... oh boy, have I got ideas. 


And I'm hoping to get BB's room painted soon. Maybe I'll tackle that next week. Poor guy needs his room painted too!

goodies : iPhone cases from Etsy

Hi y'all! Happy Monday! Saturday, Joey got home from camp and this momma split to have some me-time. I got some shopping done, errands completed, got my hair trim and even worked in a pedicure... hallelu-yer!!! And Sunday, I took a nap in the afternoon. That's right, a nap! Who's feeling a little pampered lately? This girl! haha. 


When I got my iPhone I knew I wanted a case. But I knew I wanted a pretty case, not a chunky Otterbox case like my husband has. So I ordered THIS lovely case from Society6. I love it! But then, the other day (which could be yesterday or a year ago) I saw some iPhone cases on Etsy. After browsing around, I found some awesome ones and wanted to share some of my favorites with you!
