Hi y'all!
Well, by now, you know that one of my goals for my 12 in 2012 project is to lose 30 pounds. So, I reset all of my stuff on Weight Watchers Online and while I haven't done great some times this week, other times I've done better.
One thing that I absolutely LOVE is mexican food. Seriously. It's a life source for me. Water. Shelter. Mexican food. The great thing about mexican food is that it's delicious, easily prepared and can actually be made to be pretty healthy. And since I'm so caring, I'm sharing with you all of my great recipes as I come across them.
Starting with this one:
Skinny Extreme Bean & Cheese Nachos
Great for: lunch, dinner, super bowl parties, cinco de mayo parties, etc.
Time to make : 15 minutes
Ingredients & Points Values :
24 bite size
Tostito chips – 4 points
½ cup shredded cheese – 5 points
½ cup fat free refried beans – 2 ^
½ cup shredded lettuce
– 0 ^
1 T light sour cream –
0
3 T canned jalapeno
peppers – 0 ^
1/3 cups Pace picante
sauce – 0
Place 24 chips on a plate. Spread the beans out as best as you can in small dollops. Sprinkle with cheese and microwave until the cheese is melted. Add your toppings and enjoy.

satisfying lunch. I was full and it was delicious too.

ReplyDeleteThat looks delicious! I love to eat a big 'ol salad for lunch, but I can often get in a bit of a rut where I'll make the exact same salad every single day. That could be a good thing because I know what I like, but sometimes it prevents me from trying new flavor combos!

Jimminy crickets, did you know I LOVVVVEEE nachos or something? This looks amazing. I am also a sour creme fanatic so a few months ago I switched to using plain greek yogurt instead and honestly I didn't know the difference. Definately want to try this!
